I have been setting my cooling to -10, then when the imaging session is finished I turn on the warming using APT or Astro Photography Tool.
Question is if the outside temp is 12.5c and I've set the warming to 10c, when it reaches 10c and I then disconnect the camera and shut down will this 'hurt' the chip?

No it will not hurt the chip. In fact a delta-T of 20C is pretty small; even if you killed the power at -10C it wouldn't damage anything. The sensor still warms up pretty slowly.
